Empez\u00f3 en la restauraci\u00f3n como friegaplatos en el restaurante Sant Bartomeu. All\u00ed conoce a Marc Abramovici, su padrino gastron\u00f3mico, quien, ense\u00f1\u00e1ndole las bases de la cocina francesa, despierta en \u00c1lex lo que con el tiempo se convertir\u00e1 en su gran pasi\u00f3n. Tras su experiencia en el restaurante del C\u00edrculo ecuestre de Barcelona y la cocina del Hotel Qgat, pasa a encargarse de la cocina del restaurante <em>Heura<\/em>. Actualmente es jefe de cocina en <em>Vadebacus<\/em>.<\/article>\n<\/section>\n<\/div>\n<p>Se considera completamente autodidacta, ya que sin tener ninguna formaci\u00f3n, trabaja la alta cocina. Asegura que cuenta con la ventaja de dominar varios tipos de cocina: la tradicional, la moderna y la ecuatoriana. Su meta es poder tener su propio restaurante donde poner plasmar todos sus conocimientos trabajando para s\u00ed mismo. \u00c1lex dice que la cocina es su forma de vivir y que ha tenido que sacrificar muchas cosas por esta profesi\u00f3n pero le produce muchas satisfacciones.
